Job Summary

The Gig

The primary responsibility of the Head Baker is to supervise and manage the onboard Bakery production for all outlets.

What's expected and what you'll be up to

  • Provide an epic experience for our guests at all times
  • Extensive knowledge and experience of various bakery techniques, skills and experience from Europe, France, Italy etc.
  • Responsible for the production, preparation and baking for different bread rolls, Danish, breads, croissants ensuring that standards are of the highest quality
  • Ensures that menus, recipes, guidelines and methods provided are followed accordingly
  • Responsible for all raw bakery products onboard in terms of portion control, ordering and stock rotation
  • Responsible for delivering training to other bakery team in terms of the various types of grains and flours and baking techniques
  • Ensures that any Sailor requests for special food requests, diets or allergies are adhered to, such as gluten free bread products
  • Conducts spot checks and inspections on bakery team ensuring all rules and regulations are being followed
  • Prepares the daily electronic requisitions according to Sailor count/forecast figures
  • Meets with Executive Pastry Chef on a daily basis to review production schedules and internal requisitions placed by the various outlets
  • Reports any machinery/technical faults to Executive Pastry Chef and monitors repair schedule
  • Monitors Work and Rest hours of bakery team members ensuring ILO guidelines are adhered to
  • Prepares and implements work rotas for bakery team
  • Monitors performance of bakery team ensuring that they are working to company, HACCP and USPH guidelines
  • Inspects cleanliness and condition of assigned station and service areas and rectify any deficiencies
  • Responsible for the control of food costs within their area
  • Carries out and monitors clear down routines after service and ensures the appearance and condition of all items meet Virgin Voyages standards
  • Notifies Executive Pastry Chef of any Sailor complaints raised and seeks to resolve
  • Is familiar with all cruise services/features and activations to respond to Sailor inquiries accurately
  • Prepares appraisals for individuals under their remit in accordance with Virgin Voyages policies
